TAIWANESE POPCORN CHICKEN

Serves 3 people

Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs

  • Thai Basil for garnish

Marinade

  • 9 garlic cloves, minced 

  • 1/2-inch ginger

  • 3 green onions, white and 1-inch of the green part, minced

  • 2 tablespoon soy sauce

  • 1 tablespoon mirin

  • 1 teaspoon sweet potato starch 

  • 1/2 teaspoon 5-spice

  • 1/2 teaspoon ground white pepper

  • 1/4 teaspoon cayenne pepper

Coating

  • 1 egg

  • ½ cup cold water

  • 2 cups sweet potato starch

Seasoning

  • ½  tsp 5 spice powder

  • ½  tsp Cayenne pepper 

  • 1 tsp Garlic powder

 

Preparation

  1. Cut chicken thighs into small 1 inch pieces 

  2. Mix all marinade ingredients with the chicken and set aside

  3. Make seasoning mixture using: 5 spice powder, garlic powder, cayenne, and salt

  4. Heat oil to 350F on stove top

  5. Coat the chicken in eggs, then the starch 

  6. Cook chicken in oil until it turns golden brown (4-5 minutes)

  7. Remove chicken from oil and remove excess oil on paper towels

  8. Sprinkle the seasoning onto the chicken and toss

  9. Fry some thai basil for garnish
